Back to the Basics

Tonight I went back to my early & basic cooking skills for one of my favorite quick & easy meals.

It’s been a long week, and so I decided to make it an easy dinner.  And, for as easy as it was, it was definitely one of the more satisfying meals I’ve had in a while.  Perhaps it was the wine?  Perhaps 🙂

For starters, I roasted some local organic California broccoli I picked up from Whole Foods earlier this week for $.99/lb – talk about a GREAT deal.  To roast, I sprinkled the broccoli with olive oil, salt & pepper.  Possibly the best combination out there. 


Then, I microwaved a sweet potato & (low fat) refried beans from a can (separately).  I topped the refried beans with a little salt & pepper, and the sweet potato with cumin, cayenne pepper, Lite Smart Balance, salt & pepper.  Probably one of the better ways I’ve discovered to eat a sweet potato in my life.

And I decided that what this meal really needed was some wine.

So, I opened up a bottle of 2008 – a local California wine.


And it definitely helped balance the rest of the meal.


Seriously.  I can’t complain about any part.  Each part of this meal never fails me, and together I was completely satisfied.  And the best part?  The entire meal was compiled in under 20 minutes, and the only part that took more than 10 minutes was the roasted broccoli.  Cheap, fast and efficient.  My kind of meal.

Now, once I finish my wine, I think I’ll have another glass…with these babies:


They were $.99/pint at Safeway on Sunday, and they’re about to go bad…so I shall indulge in the rest of them.  Perfect dessert!

What are your plans for the weekend?!  My plans include hitting up a winery for a tasting (I bought a Groupon for one earlier this summer!), indulging in Santa Cruz restaurant week ($25 for 3 course meal at select restaurants – umm, yes please!) and just relaxing because…Mr. K is coming to visit for the weekend!  Its been six weeks since we last saw each other, and I can’t wait for a weekend that is mostly study free.  See you on the flip side!

    • The red was decent — not the best I’ve had, but not the worst. It was a housewarming gift from two friends, so I of course, could not complain anyways 🙂
