I can’t believe its already Friday — and it is Labor Day weekend. Where did summer go?! Oy. Summer. I’m going to miss you.
Moving on. I survived my first week of math camp! It’s been challenging, and is faaar form being over, but one week down, two to go — and we have Monday off — yay 3-day weekend! Yay Labor day!
Being so busy this week, my meals have consisted of quick oats in the morning, all with a tbsp of pb and some Diamond Breeze Almond Milk, pb & j & tuna soy cheese melts with carrots & cucumbers on the side. Most nights dinner consisted of 2 scrambled eggs with toast and a spinach salad with red wine vinaigrette. Super exciting, I know 😉 Thursday, however, I was able to cook a delectable meal (its gluten & dairy free!) — Garlic & Red Pepper Chicken with brown rice pasta
Garlic & Red Pepper Chicken with Brown Rice Pasta (2 servings)
(This recipe is an adaption from the aglio e olio recipe Mr. K gave me from the Mark Bittman How to Cook Everything book)
- 6-8 oz skinless chicken breast
- 2 cloves garlic
- 1-2 tsp red pepper
- olive oil
- 2 servings brown rice pasta (or whole wheat pasta)
- salt & peppa (to taste)
In a pan, heat up about a tbsp of olive oil. While olive oil is heating up, cut the chicken breasts into bite size pieces. Chop up garlic and measure desired amount of red pepper. Toss the chicken, garlic and red pepper into the pan and saute until chicken is done. While chicken is cooking, boil water & cook the pasta. Once the pasta is done, strain it and then put it a serving bowl, and toss with olive oil. Serve the pasta, and top with the garlic & red pepper chicken. Add salt & pepper to taste, and enjoy!
I paired my Garlic & Red Pepper Chicken & Brown Rice Pasta with a spinach salad with cucumbers and tomatoes, topped with a red wine vinaigrette.
Twas a very satisfying meal — I will definitely be making this again!
Well, now I’m off to continue the math studying and hit up the gym for a good cycle/elliptical and stretching — yesterday I did a Jillian Michael’s 30-Day Shred workout and now my glutes and thighs KILL. Let me repeat: KILL. Jillian, she’s brutal. I need to do my strength training, its ridiculous how weak I apparently am. As such, I am hoping to do the Shred a few times a week, and eventually (once the marathon in October is over) do it for the whole 30-day challenge.
