Yesterday was a “lazy” day — if you can call it that. I didn’t go to the gym, but I did get my ‘workout’ in by taking apart my desk, packing a few boxes up and cooking like mad. Seriously, I cooked for the week, and possibly then some.
I’m in clean-out-the-cupboards so I don’t move any food mode. And as such, I made a box of (1) couscous, (2) “chreesy” mashed potatoes, (3) stirfryed zucchini, eggplant, onions, baby portabellos with Lawry’s Mezquite Lime marinade, (4) steel cut oats for the week. It was a crazy insane kitchen last night. But, I got a few things out of my cupboard! (And a few things have a lot longer to go — I have a feeling the last week I’m in the apartment I will be eating oats morning/noon/night. Oh well, at least they’re good?!
Last night’s dinner included (3), (2), and some tilapia pan fried with lemon peppa in EVOO.
And the veggies…up close and personal.
I also went to Walmart last night to pick up some superglue and other items they have cheaper than any place else. But as I was already stressed and tired from packing/cooking, the minute I went in and realized what a cluster the place was, I started having stress-panic attacks. It took me 25 minutes to just find the superglue. Seriously — 25 minutes! I didn’t know where to begin/where to end. And 3/4 of the items on the shelves were missing, and there was no order. I didn’t expect Walmart to ever cause me that much grief, but it did. Needless to say, I got out of there after finding my superglue. At least I go it, and now my figurine once again has a head.
This morning I woke up and did 15 minutes of the Level 1 Yoga Meltodwn with Jillian Michaels. Its supposed to be a 30 minute set, but I overslept, so I figured 15 minutes would be better than none. It felt good to be doing some yoga poses –and my room is so hot and humid that it almost felt like doing Bikram yoga — which I really want to start taking…somewhere, somehow.
I then had Overnight Oats in a Jar. So, those steel cut oats I made last night had one serving go straight into my almost empty Peanut Butter & Co Dark Chocolate Dreams container. I am so sad this jar is gone. It may be a long time before I can afford such a luxurious item again (end of job is nearing, start of PhD is creeping up quickly). And it was so good. If you can try it, I recommend it — especially if you love something like…like a Reese’s Peanut Butter Cup. Mmmm…
Overnight Oats in a Jar
Leftover PB & Co. Dark Chocolate Dreams (about 1 tbsp)
1/4 c dry steel cut oats (cooked)
1 tbsp Amazing Meal
1 tbsp chia seeds
1/4 c Diamond Breeze Unsweetened Vanilla almond milk
Cook the steel cut oats on the stove, then place in the nut butter jar while still hot, and stir around to mix in the pb. Put in the topping (except the almond milk) and mix up. Put it in the fridge overnight, and add almond milk in the morning to help re-saturate the oats. Eat cold in the heat, and ENJOY!
